The Taste of Hilton Head
Our oysters are the heartbeat of Shell Ring. They’re grown in the same creeks where Native Americans built ancient shell rings centuries ago — and they carry that history in every briny, sweet, crisp bite. Whether shucked raw, grilled on the half shell, or tucked into a Lowcountry stew, they are the truest expression of place you’ll find on a plate.
What Makes Our Oysters Different
- Sense of place. Fed by Skull Creek’s clean tidal flows, our oysters are firm, salty, and bright — pure Lowcountry.
- Hand-raised. We tumble and flip our bags daily, shaping deep cups and consistent shells that make for beautiful presentation and easy shucking.
- Sustainably farmed. Oysters filter up to 50 gallons of water a day, cleaning the creek while they grow. Farming them supports healthier ecosystems.
- Steeped in history. Our name honors the ancient shell rings nearby, reminders that oysters have always been central to this community.
- Dock to table. Harvests head straight to Hudson’s Seafood House on the Docks and select local partners. Freshness is non-negotiable.

How We Farm
1. Seeds
Tiny oyster larvae (“spat”) are set into mesh grow bags.
2. Creek Life
The tide flows through, feeding and shaping them naturally.
3. Daily Care
We tumble, flip, and monitor constantly — to shape shells and protect from fouling or predators.
4. Grow-Out
Over 12–18 months, the oysters reach market size.
5. Harvest
Pulled, washed, and delivered within hours — no warehouses, no waiting.
6. Hudson’s On the Docks
We sell exclusively to Hudson’s on The Docks to provide the highest possible quality to our guests.
Why Oysters Matter Here
They’re not just food — they’re part of Hilton Head’s story. From Native American shell rings to Civil War soldiers to today’s dockside shuckers, oysters have always sustained the Lowcountry. Farming them now ensures that legacy continues, cleaner and stronger.
